Spicy szechuan noodles

Spicy szechuan noodles 
taken from Chubby Hubby 

250g minced pork / chicken marinade with 1 Tbsp dark soy & salt 
2 Tbsp ginger, finely choppped 
3 Tbsp garlic, finely chopped 
5 Tbsp spring onions, finely chopped 
3 Tbsp tahini / sesame paste 
2 Tbsp dark soy sauce 
2 Tbsp chilli oil 
2 tsp salt 
225 ml chicken stock 
350g noodles 
1 Tbsp sichuan peppercorns, roasted & grounded (this really gives this dish the zing, try not to leave this out). 

Fry meat on high heat till crispy. Set aside. 
Fry garlic, ginger & spring onions till soft then add sesame paste, soy sauce, chilli oil, salt & chicken stock. Simmer for 4 mins 
In the meantime, cook the noodles 
Divide the noodles into bowls, ladle the sauce over & garnish with meat & roasted peppercorns.
