Steamed Golden Huat Kueh


This recipe makes 7 small huat kuehs. 
Ingredients: 
3/4 cup Corn Kernel (canned)
2 tbsp of chopped chinese celery 芹菜
3 slices of ham (cut into small squares)
1/2 cup castor sugar
1 1/2 cup water (room temperature)
2 tbsp custard powder
1 1/4 tsp baking powder
1/4 tsp bicarbonate of soda
1 cup rice flour
1 1/2 cup cake flour
 

Method: 
Heat the water in the pot with some tea-cups (陶瓷茶杯) in it. 
Mix the sugar with water and stir till the sugar has been dissolved. Add cake flour, rice flour, custard powder, baking powder, bicarbonate of soda into the sugar water and mix well. Add corn, ham and chinese celery into the mixture and mix well. 
Fill the batter into the "hot" tea-cups, and steam at very high heat for 12 -15 minutes or till done. 

Golden rules:
1. Do not add too much of bicarbonate of soda as it will give a very bitter taste. 
2. The water should be boiling before the steaming of "huat kueh".
3. If using porcelain tea-cups to steam the "huat kueh", make sure it's been heated before adding the batter into tea-cups.
4. Always remember, "A wok is better than a steamer, a small pot is better than a big pot".
5. Do not open the cover and peep the "huat kuehs" within the first 12 minutes.

Red Bean Kuih

1/2 cup red bean, boiled till soft 
4 cups water 
3/4 coconut milk 
1/2 evaporated milk 
1 cup sugar 
1 cup cornflour 
10g gelatine 

Method 
1. Heat sugar in 3 cups of water 
2. When sugar has dissolved, add in coconut milk and evaporated milk, cook till boiling 
3. Add in gelatine and continue to boil for 5 min 
4. Mix 1 cup water with 1 cup cornflour, slowly pour cornflour mixture into milk mixture 
5. Add in red bean 
6. Pour into cake tin and fridge for 1-2 hrs 

The amount coconut milk and evaporated milk can be adjusted, if more of former, then you add less of latter.

Banana Kueh

smash the ripe banana,
add 1 egg,
a teaspoon of baking powder,
1 cup of flour and 
half a cup of brown sugar and 
wait for 15 mins for the baking powder to get effect. 
make sure the mixture not too watery if it is just add a bit by bit flour.

add some sugar if its not sweet enough, 
add in some baking powder and 
a bit of flour..

mash the bananas (my fav choice would be pisang mas) and add flour and castor sugar

Corn kueh


1 can of corn kernel 
250 ml of coconut milk- can use the packet coconut milk 
650 ml water 
175 sugar 
1-2 pandan leaves 
1 packet of hoon kwee flour 
1/2 teaspoon of salt 

Mix everything in a pot and cook using slow flame until slightly thicken. Must keep stirring all the time. Once thicken wrap in banana leaf or plastic . You can also use those agar agar mould or small plastic container .

Tapioca Kueh

500g tapioca (skinned n grated) 
120g sugar 
50g coconut milk ) kara coconut milk 
160g water ) 
1/2 tsp salt 

Dessicated coconut 
1/2 coconut ) mix and steam over high heat 
1/2 tsp salt ) for 20 mins. Put aside 


Mix all the ingredients 

Grease a 8" x 8" baking tin and lay a sheet of plastic 

Pour the mixture into the tin 

Steam over high heat for 20 mins 

Cut into pieces and spread dessicated coconut on the 
surface.
