2 Red apples
2 large carrots
1 pkt dried cabbage 菜干 (available fr Chinese Medical Halls)
300g pork
4 honey dates
¼ dried tangerine peel
salt to taste
Method
1) Soak Dried Cabbage till soft, wash & strain.
2) Peel apples & carrots. Wash & cut into pieces.
3) Wash the pork & scald with hot boiling water.
4) Rinse honey dates & tangerine peel.
5) Bring a suitable amount of water to a boil. Put all ingredients in. Bring it to a boil, then parboil on lower heat for 2 hours. Season with salt. Serve.

Carrot Cake
Ingredients:
250ml vegetable oil
150g brown sugar
3 eggs
500g coarsely grated sweet carrot (sweet, as oppose to bland. I like to use the Aussie medium-size carrots found in NTUC supermarkets that are "brandless".)
120g coarsely chopped walnuts (I crush the walnuts individually because I like coarser bits in the cake.)
375g self raising flour
1/2 tsp bicarbonate of soda
2 tsp mixed spice

375g self raising flour
1/2 tsp bicarbonate of soda
2 tsp mixed spice
1. Preheat oven to 180 degrees C.
2. Grease a 9" x 9" pan and line with baking paper.
3. Sift the flour, bicarbonate of soda and mixed spice together in a bowl.
4. Whisk eggs and sugar on MED till thick and creamy.
5. Fold in the oil lightly. Don't worry if the oil doesn't bind into the mixture at this stage - because it won't. Therefore, you don't need to stir the mixture too long.
6. Fold in the carrot and the walnuts. Again, don't worry if the carrot and walnuts don't get mixed evenly; the mixture still won't bind well until you...
7. Add in the dry ingredients. In this case, add in a few spoonfuls at a time, until the batter is more or less even.
8. Pour mixture into the pan and bake for about 1hr or till cooked. Test using skewer. If the top is browning too fast, cover it loosely with foil.
9. Stand cake in pan for 5 minutes before turning onto wire rack. Turn cake top-side up to cool.

Carrot Cake
Ingredients
Set A:
2 cups sugar (less if desired)
4 eggs (medium)
3 tsp vanilla essence
1 cup melted butter (250g butter block)
Set B:
2 1/4 cup self raising flour
2 tsp bicarbonate of soda
3 1/2 tsp cinnamon powder (McCormick)
1 1/2 tsp salt
Set C:
2 1/4 cup grated carrot (1.5 500g packets from Coldstorage; squeeze out excess water before measuring)
1 cup chopped pineapple (1 can Malapine chopped pineapple; squeeze out excess juice before measuring)
1 cup chopped walnut
Method
1. Preheat oven to Gas 5/350'F/150'C.
2. Add all ingredients in Set A together when butter is cool
3. Sieve all ingredients in Set B together.
4. Mix all ingredients in Set C together.
5. Add Set A to Set C.
6. Add Set B a little at a time. Mix well. Divide into 2 loaf tins.
7. Bake in preheated oven for half an hour, then reduce heat to Gas 4/300'F/125'C for next 30-45 mins. They're ready when a skewer comes out clean.

1/2 cup of raisins
1/2 cup chopped walnuts
Preheat oven to 325/180 degrees. Sift dry ingredients into a bowl, then mix in wet ingredients. When batter is well mixed, fold in carrots and raisins. When well mixed, pour into cake mould and bake for approximately 45 minutes.
I bake this in a bundt pan (bought from Ikea).
Cream Cheese Icing
1/4 cup butter at room temperature
8 oz package of cream cheese (Philadelphia) room temperature
1.5 cups icing sugar
1 tsp vanilla flavouring
Mix cream cheese and butter thoroughly to remove any lumps. Slowly mix in vanilla and icing sugar. Spread on cake after the cake has cooled for at least one hour. Put the iced cake in refrigerator to allow the icing to set.
