Ingredients:
1 tsp McCormick Cinnamon Ground
½ tsp McCormick Nutmeg Ground
125g soft brown sugar
200g self-raising flour, sifted
40g chopped walnut
100g melted butter
2 tbsp milk
1 egg
3 ripe bananas, mashed
14 medium-sized muffin cups (note: I used 8 large cups)
Method:
1. Preheat oven to 200°C.
2. Combine flour, walnuts, McCormick Cinnamon Ground, McCormick Nutmeg Ground and sugar in a mixing bowl. Make a well in the center.
3. Using a fork, whisk egg, add in butter, egg, milk and banana together. Add to flour mixture and fold together until just combined.
4. Spoon into muffin cups and bake for 25min.

Spiced City Cake
* 180g plain flour
* 150g raw/brown sugar( this amt is fine because the sweetness will get neutralized by the cocoa )
* 60g cocoa powder( Van Houten is ok. The vinegar in the recipe gives the necessary acid. )
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 teaspoon ground fennel
* 1/2 teaspoon ground cardamom
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1 teaspoon vanilla essence
* 200g warm water
* 120g vegetable oil
* 200g pureed silken tofu
* 1 tablespoon white vinegar
Method:
- Thoroughly blend and sieve the dry ingredients.
- Whisk/thoroughly mix wet ingredients together and pour into dry ingredients. Mix well.
- Dump into your 9" pan( bottom lined, sides greased+floured/cocoa-ed ). I would actually encourage baking in 2 pans and later fill something in the centre.
- Bake at 180C( or less ) for around 30 - 40 mins. If divided, then perhaps 20 mins.....if baking in 2 tiers, switch positions after 15 mins.
- Completely cool before unmoulding.
