Chilli Crab


for 3 - 4 or more crabs depending on the size

half -1 tbsp laksa paste( without coconut )
3-4 tbsp ketchup
1 tsp chilli powder
3-4 sliced fresh red chillies
juice and rind from 1 lime( 2 limes if dry and small )
2-3 tbsp fish sauce
1 tbsp sugar
1 egg
potato starch slurry for thickening( or use cornflour )
water or stock

- Deepfry or steam cut up cleaned crabs.
- Saute laksa paste, ketchup & chilli powder in oil. Dump in the crab.
- Add in fish sauce, sugar and enough water or stock to make it sort of soupy. Cover and let simmer for a few minutes.
- Throw in the chillies, lime juice and rind. Thicken with starch. Taste for saltinesss.
- Beat the egg, pour it in and turn off the heat. Stir it about to obtain egg strands.
