Coconut Moments

Ingredients 
A: 
180g butter 
80g icing sugar 
1/4 tsp coconut essence (I didn't use this) 
B: 
100g plain flour (I used cake flour cos run out of plain flour) 
150g potato starch 
30g desiccated coconut 
30g coconut powder 

1. Mix ingredients (A) well. Fold in ingredient (B) and blend to form a dough. 
2. Place dough in between 2 plastic sheets and roll to a thickness of 5mm. Cut dough with cutter. Egg wash the cookies and scatter some desiccated coconut o top. 
3. Bake in a preheated oven at 170C for 15-20mins until pale yellow. 

This dough is very soft. So I had to place it into the freezer to harden before cutting. Also take note that the cookies spread a little, so don't place them too closely.
