Madeleines

Ingredients 

4 eggs 
175g caster sugar 
125g plain flour 
1tsp baking powder 
115g unsalted butter, melted and cooled 
1tbsp grated lemon zest 

1. Preheat oven to 175C. Beat eggs and sugar until pale and thick. Sieve flour and baking powder and then slowly add the flour mixture to the egg mixture. 
2. Pour in the melted butter and stir in lemon zest. Refrigerate for 20 min. 
3. Spoon batter into moulds filling about 2/3 full. Bake for 20 min. 
4. Remove madeleines and cool.
