Rendang Negeri

Marinate 1 kg cubed beef brisket with the following pounded/blended ingredients:
- 15 each red & green bird's eye chilli, 6-7cm fresh turmeric, 4-5 cm galangal, 5-6 shallots, 3-4 garlic cloves, 1 tbsp gula melaka, 1tsp salt.

Dump it into a pot along with 3-4 pcs assam gelugor, 3-4 bruised lemongrass and coconut cream from 2 coconuts. Boil and simmer for 2 hours. You may need to keep it covered to prevent too much evaporation. Add in 4 tbsps kerisik*, 2-3 torn kafir lime leaves and 3-4 pandan leaves knotted together. Stir and cook till dry.


*pan roast 6 or more tbsps of shredded coconut( white part only ) till light brown. Cool and grind/pound till fine.
